These Cacao almond nut butter cookies looked good to eat before, during and after a long swimming workout.
Developed by log swimmer Ross Edgley, it takes him 15 minutes to make. “I keep them at the end of the swimming lane for me to snack on during my 10 km swims that can take anywhere between 3 to 6 hours.”
His recipe is here as he gears up for four log-pulling swims this summer:
* Swim #1: 10 km Great Swim in Windermere, England on June 10th
* Swim #2: 15 km Great Swim in Newham, London on July 1st
* Swim #3: 20 km Great Swim in Loch Lomond, Scotland on August 26th
* Swim #4: 40 km from Martinique to Saint Lucia in the Caribbean Sea on November 12th
